We ate some pretty delicious caribou steaks on the fire recently. What made them even better was roasting marrow bones on the fire first then making a spread with some marrow, butter and spices to go on the hot spicy steaks.
Brings me to mind of the recent episode of "ALONE" The winner shot a moose(not sure how a non resident alien can legally do that without a guide but I digress) but at the end was whining about not having any fat to supplement his protein. 83(?) days. The meat and marrow from 1 moose should have sustained him all winter let alone 83 days. BTW, I love marrow exactly as you described or even just "buttered" on bread.
